What are microgreens?

Microgreens are edible plants that are harvested between the sprouting and baby growth stage (far earlier than the mature varieties we all know).  They could be a fruit, vegetable, herb or even a flower!  Many microgreens reach their ideal size and flavor in about 7-14 days (others 21+).  That means we can grow a lot really fast.  They are at their prime during the appearance of the cotyledons (their first leaves) and often at or before their “true leaves” emerge.

Why microgreens?

  • First and foremost, they are good for you!  These are powerful little seedlings teeming with nutrients and vitamins.  There are several studies indicating the health and medicinal benefits of these superfoods.  Boosts immunity, fights illness.  Improves digestion, inflammation.  Most notably, microgreens pound for pound provide 4-40% more nutritional benefit than their mature counterparts!*
  • Secondly, they taste incredible!  They are very flavor-rich and enjoyable to eat.  They take on a completely different flavor profile and texture to what you might expect from the full-grown equivalent.  Depending on the variety, some are tender or crisp, and tastes can be mild, intense, sweet, savory or spicy!
  • Lastly, they look amazing!  There is nothing like the satisfaction of knowing you are eating the absolute freshest greens available, but these bold, colorful, tiny beauties make any dish seem like they came straight out of a professional kitchen.  Can you say #Instagram worthy?

How Do I Use microgreens?

In culinary circles, these have often been used as a garnish and referred to as “confetti”, however in recent years the familiarity and popularity (due to the aforementioned benefits) has brought this little known secret into homes and families love them!  We also see microgreens being incorporated into more and more recipes in restaurants and other commercial settings.  Generally speaking microgreens are really great at pairing – they just enhance and amplify whatever you already enjoy.  Most common uses are in salads, sandwiches, wraps, smoothies, protein dishes, pasta, tacos, international cuisine, sautés, baked goods… you get the idea.  The standing rule at the farm is you put it on everything!  Breakfast, lunch and dinner.
